Chair, Roy Oakford called the meeting to order. Minutes of the April 2006 F&B meeting were approved.
The comment card drawn for May was Doris Judge winner of dinner for two.
Welcome new Executive Chef
Duane Keller was introduced and welcomed as the new Executive Chef.
Action Item Report Changes
Hans Weisstanner reported –

Beginning
Memorial Day, Deli Service at Marsh Mansion featuring cold sandwiches, hot
dogs, drinks and beer will be available Fridays, Saturdays, Sundays and
holidays from 10am to 6pm.
·
A
plaque naming the dining room “supervisor on duty” and “hours of operation” has
been hung near the podium in the dining room.
·
Plaques with the new room names have not been ordered. Jeanna Hilton will be responsible for
ordering the plaques.
·
The
gates to the receiving dock have been repaired and will be kept closed.
·
Due to new staff still being hired, service training has yet to be scheduled. Hans will inform Roy Oakford, Sheila
Falsetti and Kay Riley when service training is available.

Jeanna Hilton reported a large poster announcing the
4th of July event in the Grand Ballroom is on display at the
Clubhouse.
New Business
Reservation cancellation issue was presented to the
Committee by Jeanna Hilton. After
discussion it was agreed that telephone cancellations will not be accepted
under any condition. A red form must be
filled out. The
blue reservation form will be revised to include instructions that cancellations
must be submitted on a red form.
Andy Hicks reported on the meeting of the Beverage
Cost Sub-Committee. He presented the concerns,
objectives and beverage pricing breakdown along with the proposed/revised
pricing. Beverage card use will be
restricted to member events.
The Committee discussed the dining room closing June
12 thru June 16 for renovation. It was suggested to have a “Re-opening Cocktail Party” for HH
residence. Paula Daitch, Sheila
Falsetti and Kay Riley will meet with Jeanna Hilton to plan the event.
With increased business in the dining
room, reservations are strongly recommended.
Hans Weisstanner addressed the recent dining room
complaints and is working on solutions to improve the quality of service and
food to make dining at the Club a pleasant experience for all members.
Statistics Report –
Covers/Costs, Andy
Hicks will work on breaking out lunch, happy hour, dinner, and member events.
Paula Daitch and Kay Riley reported that a tentative
2007 F&B calendar has been prepared.
The meeting was adjourned at 11:50. The next meeting will be June 20.
